Lemonade scones

Although I seem to have cast myself out in the world as a culinary expert ,there are things that I have repeatedly failed in the kitchen. Chocolate Caramel Squares are the mnost recent but the most frequent failure has been the humble yet complex scone ! Why oh why does my lovely soft dough come out of the oven with a texture fit to kill a duck if fired haphazardly. Why does something which looks so tempting taste so bad when you bite into it. Big Mamas Mil ( Mother in law)is still recovering from the last experiment, which I proudly presented at an extended family function, only to have them shot down in flames with much hilarity......gits !
Big Mamas Mama is a very acomplished scone maker but failed to had over the scone DNA required si I had to search the world for a solution. I googled "foolproof scones" and came up with a vast array of recipes, narrowed it down to 3 and set about testing. I decided in a vert brave moment to bring my first experiment results to my boss "OB1" who is a very accomplished cook and does have the authority to fire me....who else would I have chosen !The following recipe secured my job for many years to come and is indeed foolproof.

Lemonade Scones ...yes lemonade !


300g (2 cups)self raising flour sifted
55g (1/4 cup)caster sugar
125ml (1/2 cup)thick cream
125ml (1/2 cup)lemonade
40mls( 2 tbs) milk
1/2 tsp salt

Preheat the oven to 220 degrees. Lightly grease a baking tray.

Place the flour, sugar and 1/2 tsp salt into a large bowl. Add the cream and lemonade and mix to form a soft dough. Turn out onto a lightly floured workbench and knead lightly until combined. Press the dough with your hands to the thickness of about 2 cm. Use a 6 cm cutter to cut out 8 scones, place on the baking tray and brush the tops with milk. Bake for 10 -15 minutes until lightly browned. Serve warm with my favourtite jam from the Real Irish Food Co.

  1. Glad you finially found the hidden DNA-mine is obviously somewhere near the base of my little toe!! I have yet to succeed even with the most foolproof recipes for scones -will try the above-if i manage them gluten free I will be sooooo chuffed!! Apparently its all about minimal kneeding-much TLC needed! Keep up the good work bigfoodiemama-loving the blog sis xx
